Avocado and Black Bean Burrito

makes 1 serving

  • 1/2 cup black beans
  • 1/4 cup chopped avocado
  • 1/2 lemon, juiced
  • 1/8 teaspoon ground black pepper
  • 1 whole-grain tortilla

Combine black beans, avocado, lemon juice, and pepper.  Spread bean mixture in tortilla and roll into burrito.

Nutrition facts per serving: 259 calories, 9 g total fat, 1 g saturated fat, 304 mg sodium, 44 g total carbohydrates, 22 g fiber, 17 g protein

BALANCE IT OUT: Pair this burrito with apple slices and peanut butter or baby carrots and hummus for a complete satisfying meal.
