To feel and look your absolute best it is important to eat a wide variety of natural colors (red, blue, purple, orange, yellow, green, and white) but focusing on eating enough green foods is extremely important. Green foods such as salad greens, winter greens, and broccoli are literally packed full of essential nutrients. These greens will allow your skin to glow, unwanted weight to melt off, and your body to maintain excellent health. The United States Department of Agriculture recommends we eat 3-6 cups of dark-green vegetables a week but I personally feel it should be much higher. I aim to eat at least 1 large salad or green smoothie every day to make sure my body gets enough of these powerful green foods. Doing so is super easy in the summer but in the winter I find it a lot more challenging to actually want to eat a large salad daily. Luckily, I have found that cooking at least part of the salad or warming up the dressing before tossing with the leafs makes almost any salad winter approved.
This broiled pear and goat cheese salad is a classic combination of simple ingredients that blend together perfectly for a taste that is superb and a look that is just as gorgeous as it tastes. Broiling the pear is such an easy touch that brings out an element of comfort to this dish and is sure to excite your taste buds any time of the year.
Broiled Pear and Goat Cheese Salad
makes 1 serving
1/2 lemon
3-4 Pear Slices
2 teaspoons Balsamic Vinegar
1 teaspoon Olive oil
sea salt and pepper, to taste
3 cups salad greens (mixed bag, spinach, arugula, etc)
1 tablespoon cranberries
1 tablespoon chopped walnuts
1 tablespoon crumbled goat cheese
Preheat broiler on oven.
Squeeze lemon juice on both sides of pear slices. Lay pear slices on baking sheet and broil on low for 3-4 minutes, until pear is soft and golden.
Whisk together balsamic vinegar, olive oil, sea salt and pepper. Toss vinaigrette with salad greens and top with cranberries, walnuts, goat cheese, and broiled pear slices.
