Dark Chocolate Pudding

I have been working on creating a chocolate recipe with no added sugar and only using the sweetness from natural fruit.  After many failed attempts I finally came up with a delicious chocolate pudding recipe.  I hope you enjoy this guilt-free tasty treat!

  • 4 dried figs
  • 3/4 cup water
  • 1/2 cup cocoa powder
  • 1 avocado, peeled
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened vanilla almond milk or rice milk

Cut the figs in halve and soak in 3/4 cup water overnight or for about 8 hours.  (Note the natural sweetness of the figs will leak out into the water, making the water a thick honey like consistency.)  Blend together water and figs, cocoa, avocado, vanilla extract and milk in a food processor or blender until smooth and creamy texture.

Nutritional information per serving: 125 calories, 9 g total fat, 1 g saturated fat, 19 mg sodium, 10 g total carbohydrates, 8 g fiber, 2 g protein
