Homemade Quinoa Burger

makes 6 servings (6 patties)

  • 1 cup cooked quinoa (about 1/3 cup dry quinoa)
  • 2 cups pinto beans (or 1 can pinto beans, rinsed and drained)
  • 1.25 cups oats, raw
  • 1/8 teaspoon cayenne pepper
  • 1/4 cup grated onions
  • 1/2 cup grated carrots
  • 1/2 cup ground almonds
  • 1 tablespoon olive oil

Blend all ingredients together in a food processor, then shape into 6 patties.  Grill patty for 3-4 minute, per side or until golden brown.

***Recipe Note: these patties freeze well for up to 6 months.  To save time make a few batches at one time, and freeze each patty individually. Then simply defrost and grill for a quick meal.***

Nutrition facts per serving (patty): 250 calories, 8 g total fat, 0 g saturated fat, 11 mg sodium, 35 g total carbohydrates, 10 g fiber, 11 g protein

BALANCE IT OUT: As you can tell in the picture, I love to eat my quinoa burger on whole grain bread with spinach, tomato, and pear slices.  This burger also works well chopped up in a salad or wrapped up in a tortilla.
