Sun Dried Tomato & Green Bean Penne

  • 1 cup cooked whole grain penne
  • 3/4 cup fresh green beans, steamed
  • 1/4 cup sun-dried tomatoes, packed in oil
  • 2 tablespoons reduced fat shredded mozzarella cheese
  • 1/2 lemon, juiced
  • pinch of red pepper flakes
  • 1/8 teaspoon each: salt and pepper

Toss all ingredients together.

Nutrition facts per serving: 308 calories, 5 g total fat, 3 g saturated fat, 0 g trans fat, 397 mg sodium, 55 g total carbohydrates, 9 g fiber, 16 g protein

BALANCE IT OUT: Serve with 3-4 ounces grilled salmon, chicken, or tofu for a nutritious colorful meal!
